Kitchen Math

Okay, I don't suck at Math, I _know_ this... I know I suck at anything having to do with the kitchen, but this is throwing me off completely.

I'm looking at the meta data section of a recipe, it says (verbatim):

    Prep Time: 15 Minutes
    Cook Time: 12 Minutes
    Ready in: 40 Minutes
whhhAAAAATTT?!?!?!

I would never have bothered with The Supreme Evil, commonly referred to as The Kitchen, but I'm not quite ready to throw in the towel yet.

The other 13 minutes is called "Dark Time" and forms 99% of the known cooking universe...

Well, that or it's also known as the "let sit so that nobody puts this liquid lava in their mouths at the full 400 degrees it is at after cooking" delay factor. Very common in cookies, breads, and other such recipes.

Usually for me, that's my "recipe reading allowance" time. :-)

maybe it's cool-off time? (for the cook, or the dish.)
